Blackened shrimp is by far my favorite thing to eat so after my workout last tonight, I threw this together for a quick and healthy dinner.
So what will you need?
Just a few things:
Two bowls
Pre-cooked shrimp (defrosted if frozen)
A head of lettuce
& the following:
Bowl #1:
4tbs melted ghee (butter alternative)
Bowl #2:
1tsp black pepper
1tsp garlic powder
1/2tsp cajun seasoning
1tsp lemon pepper
Now, take your pre-cooked shrimp and dip each piece in the melted ghee. Once that's done, lightly coat each piece of shrimp with the spices. With this step, if you want it hot, fully coat each piece of shrimp by throwing the shrimp directly into the spice and gently pressing on each side. This will help more spice stick to the shrimp so you have a really blackened and HOT meal. Spice-wise, NOT temp!
If you just want more of a mild flavor/slight spice, then sprinkle the spices on top of each piece of shrimp. That way, you have more control of how much spice you're using to ensure you don't overdo it on the hot factor because with this recipe, it's easy to do!
After you've coated each piece of shrimp in your spices, add them to the pan and turn the stovetop to medium heat. Cook each side of the shrimp for approximately 3-5 mins on each side, until you get a nice, dark color (you'll be able to notice the difference when you flip it to the other side). Once you've blackened each piece of shrimp, lightly sprinkle some lemon juice over top and then transfer the shrimp over top of some iceberg lettuce and enjoy! You can eat it like a salad or wrap up each piece and eat it like a tiny lettuce taco. Either way, it's a perfectly delicious and healthy meal!
